Business Spotlight: Birch Benders

You might have noticed a new sign on the building at the northwest corner of 25th and Eaton. Birch Benders opened up their office location at 5701 W. 25th Avenue and it will be the hub for their business of providing natural, organic pancake mix.

Here’s an interview Chief Brand Officer Brandon Sharp:

How did you get involved in this business?

Birch Benders started with an idea: what if you could crack an egg over a griddle, but instead of getting a fried egg, you’d get a gourmet pancake? Try as he might, Matt was unable to find a hen that would lay such an egg. But when his search brought him to Boulder, he befriended fellow pancake enthusiast, Naomi. Putting heads and hunger together, they created the next best thing to a miracle hen: Birch Benders Micro-Pancakery. Lizzi, Matt’s college classmate and now wife, joined the team and forged the path to making Birch Benders the first natural and organic, just-add-water pancake & waffle mix. Brandon, another college classmate, jumped aboard to spread the good word of Birch Benders across the nation.

What drew you to open a business in Edgewater?

Although Matt started the company in Boulder, he and Lizzi decided to move down to Denver in 2013 and settled in the West Highlands. I also live in the Highlands, so when we were looking for offices toward the end of last year, we wanted to stay in this general vicinity. When we saw this office on 25th Ave, with its proximity to Sloan’s Lake, we knew we had found our new home! This is actually the first official office Birch Benders has ever had – we were working from our homes before this.

What products do you offer?

Birch Benders is the first natural, organic, just-add-water pancake mix. We are available in Whole Foods and Sprouts in this area, and starting in September we will be on Target store shelves nationwide!
