We are excited to share a little information about Gladys, a new food business from a duo of accomplished chefs that opens tomorrow (Tuesday, November 16) inside the Edgewater Public Market.
Gladys is a vegetable-focused new American restaurant serving up casual food inspired by fine dining. Launched by chefs Rocky Hunter and Dave Grant, most recently from the kitchen at Fruition, Gladys will feature seasonally driven small plates made for sharing.
“We want to serve food that evokes the spirit of grandma’s hospitality,” Hunter said. Gladys is named after his grandmother.
To begin, Gladys will be open Tuesday to Thursday from 11 a.m. to 9 p.m., Friday and Saturday from 11 a.m. to 10 p.m., and Sunday from 11 a.m. to 8 p.m.
Gladys joins eleven other food stalls and six restaurants at Edgewater Public Market, along with a coffee shop, brewery, and cocktail bar, and multiple locally owned boutiques.
Joel has been a resident of Edgewater, Colorado with his family since 2012. He is the Executive Director of local education nonprofit Edgewater Collective and Editor of the Edgewater Echo.
