A look at the delicious food from Lucky Bird!

The opening of the Edgewater Public Market at 20th and Depew is coming soon so we thought it would be a great time to spotlight the businesses moving into the spaces.

Today we are talking to Leigh Davison from Lucky Bird who will be part of the food hall!

How did you get involved in this business?

It has been a life long dream to have a restaurant concept and I have been a chef for the last 10 years. The food truck was a great way to test the market and find the perfect spot in the Denver area. I heard about Edgewater Public Marketplace from another food truck operator and decided to look into it. I loved the concept and location and knew Lucky Bird had to be a part of the marketplace. We are extremely excited to bring the Lucky Bird to Edgewater.

What drew you to be part of the Edgewater Public Market?

Seeing the location and that the marketplace is bringing amazing food concepts and retailers under one roof we knew Lucky Bird had to have a home here. Food halls are a great way for people to try chef driven food at an affordable price.

What kinds of products will you offer in your shop?

We do gourmet hand breaded chicken tenders with house sauces, roasted chicken, salads, and sweet potato waffle fries. Yum!

What makes your business unique?

We are making everything from scratch. We brine the tenders, dredge them twice, and fry them from raw. It makes the perfect chicken tender. Lucky Bird is putting unique twists on the classics like our spicy chicken paired with gochujang butter and house pickles on a potato bun. Simple yet delicious.
